Vegetarian toastie roasted eggplant & zucchini

Vegetarian toastie roasted eggplant, zucchini, sundried tomatoes, rocket, feta and olive tapenade vegetarian toastie


• ¼ loaf Turkish bread
• 2 tbsp Sandhurst olive tapenade
• 2 slices of Sandhurst chargrilled eggplant
• 2 slices of Sandhurst chargrilled zucchini
• 5 Sandhurst sundried tomatoes
• ¼ cup of rocket
• 30g of Sandhurst Persian style feta cheese
• 1tbsp of butter

1. Pre-heat oven to 200 degrees.
2. Spread the butter on the bread and place in oven for 5 minutes until crunchy.
3. Spread on both sides: olive tapenade, then place the vegetables one layer at a time, zucchini,
tomatoes, rocket and eggplant. Finish with feta, and ready to serve.
